Knife skills 101: dice an onion

Real knife. Claw grip. Onion tears optional.

How to do it

Show them the claw grip — knuckles forward, fingertips tucked. Use a real chef's knife but stay right there. Halve onion through the root. Slice toward (not through) the root, then crosswise. Talk about why root-end last (it holds the onion together). When done, sauté it together and smell the result.
