Sunrise hike + journal one observation
Up before everyone. Walk somewhere quiet. They write one sentence.

How to do it
Set an alarm 30 min before sunrise. Pack water and granola bars. Drive to a trail or just walk a quiet street. Don't talk much — let them notice. At the top (or end), hand them a notebook: 'One thing you saw. One sentence.' Keep the notebook. Do this a few times a year. They'll reread it when they're 20.
